I sent this assortment in an e-mail earlier to Robin, but some of the recipes looked SOOOOO good, I had to post them. I think 101cookbooks might be my new favourite site!
Really easy (still roasted) side dish is potatoes--whole or cut, par-boiled if you want them to cook faster, then sprinkled with oil, salt, pepper, and rosemary. Then bake. OR smashed potatoes. You cook the potatoes whole in boiling water, then smash them a bit so they have a big squished centre and sprinkle oil, salt and pepper directly onto the tops.

Lentil shepherd's pie. http://www.vegsoc.org/cordonvert/recipes/season2.html I've heard good things about shepherd's pie, but Crocker School's cafeteria ladies ruined it for me. I should probably give it another chance. PLUS, if I don't like the sound of mashed potatoes I could have mashed swede (rutabaga), mashed parsnips, or biscuits on top.
